Yummy Bisquick Zucchini Pie

Here is a delicious zucchini pie recipe. This recipe is quite similar to a quiche but it is crustless. You still get the satisfaction that you would from a crust because there is Bisquick in the zucchini casserole itself. It is great comfort food and you can serve it as a breakfast dish or a dinner side dish. This Bisquick zucchini pie is easy to make with very little prep work and a short cook time. It is one of my favorite zucchini recipes.

This time of year, you are likely to be having an abundance of zucchini coming from your garden. Here is one fun way to enjoy your bumper crop of zucchini which is a healthy vegetable choice. Fresh zucchini are full of phytonutrients, minerals, and vitamin C. I hope you enjoy this zucchini casserole or as we call it in my family, crustless zucchini pie. This zucchini recipe came from my great-grandmother, so from my family to yours, enjoy!

Bisquick Zucchini Pie Recipe (AKA Zucchini Casserole and Zucchini Quiche)

Zucchini pie is a savory dish made with zucchini as the main ingredient. It typically consists of sliced or grated zucchini mixed with other ingredients such as onions, cheese, eggs, and herbs, all baked in a pie crust or a mixture similar to a quiche. Zucchini pie can be a delicious and nutritious dish, often enjoyed as a side dish or a light main course. The zucchini pie hack here is the use of Bisquick to make it super easy and delicious.

Recipe Notes:

  • My grandmother always used all zucchini in her bisquick zucchini quiche and that is my favorite. I have tried it before though with half fresh zucchini and half yellow squash and that is a great recipe too. This yellow squash zucchini mixture does work just fine and still tastes great!
  • If you are out of parsley, substitute fresh basil or dried basil in this savory pie.
  • As far as the onion goes, yellow, white, or red onion will all work just fine. Also, a small onion will work just fine as will a large onion. Don’t sweat that too much! You could even substitute one cup of green onions in a pinch!
  • While you could use a food processor to slice the zucchini if you have that attachment, chopping them by hand works just as well.
  • You can bake in a glass 9 by 9 pie plate, metal pie pan, baking pan, or a casserole dish. They will all work just fine. I used a 9 by 12 Corningware casserole dish.
  • Don’t forget to grease your pan. You can use vegetable cooking spray or olive oil or butter, as you prefer.
  • You can set a little of the called-for cheese aside and after your batter has gone into the pan, sprinkle your reserved parmesan on top. I did not this in the photos but it does brown up nicely if you like it that way.
  • Speaking of cheese, if you are a huge cheese lover, feel free to add 1/3 cup of cheddar cheese along with the parmesan for even more cheesy flavor in this Bisquick zucchini bake!

Zucchini Pie Bisquick Ingredient Checklist: 

  • 3 cups of sliced zucchini
  • 1 medium onion
  • 1 cup Bisquick (or biscuit mix)
  • 4 large eggs
  • 1/2 cup vegetable oil (or olive oil)
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon parsley flakes or finely chopped fresh parsley
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon salt (optional)
  • 1/8 teaspoon black pepper

How To Make Zucchini Pie With Bisquick:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Slice thin and dice the zucchini and the onion.
  3. In a large bowl, combine zucchini with the onion, biscuit mix, eggs, oil, cheese, parsley, salt and pepper and mix together until zucchini is evenly coated. My grandmother’s recipe calls for grated parmesan cheese but I prefer to use Locatelli grated pecorino Romano cheese. They both taste delicious so use what you have on hand.
  4. Pour mixture into a prepared baking dish such as buttered pie plate or 9×13 casserole dish. Bake for 30 minutes or until golden brown and set in the center.
  5. Let it cool for a few minutes before slicing and serving.
  6. Serve zucchini pie Bisquick warm and enjoy!

Zucchini Pie

Ingredients

  • 3 cups zucchini
  • 1 small onion
  • 1 cup biscuit mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup parmesan cheese
  • 1 teaspoon parsley flakes
  • 1/4 teaspoon salt (optional)
  • 1/8 teaspoon pepper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Slice thin and dice the zucchini and the onion.
  3. Mix together the zucchini, onion, biscuit mix, eggs, oil, cheese, parsley, salt and pepper until zucchini is evenly coated.
  4. Pour mixture into a buttered pie plate or casserole dish and bake for 30 minutes.
  5. Serve warm and enjoy!
